\"04_Ristorante\"<\/p>\n

Our love of food is based on the choice of raw materials: the cereals<\/strong>, legumes<\/strong>, extra virgin olive oil<\/strong> and truffles<\/strong> all produced directly by us. The other ingredients are almost all provided by small local producers<\/strong>, certified organic farms.<\/p>\n

Dishes include hand-made pasta<\/strong>, gnocchi<\/strong> and ravioli<\/strong>, and soups<\/strong> prepared with organic cereals and legumes and other seasonal ingredients.<\/p>\n

No less attention is paid to meat. For much of the year, we breed pigs<\/strong> according to custom especially for us and for our guests. Chickens<\/strong> and rabbits<\/strong> come from small local farmers, and we select only prime cuts of beef<\/strong> and lamb<\/strong>.<\/p>\n

Most of the vegetables<\/strong> come from our vegetable garden<\/strong>, while the potatoes come from Leonessa.<\/p>\n
