In our organic farm we cultivate legumes and cereals and we have been practicing crop rotation for generations, thus allowing the soil to regenerate and the crops to give the best fruit.
In the natural truffle grounds and in the cultivated truffle ground we collect the precious black truffle of Norcia, (Tuber melanosporum Vittadini), the most delicious among the black truffles. Born underground in symbiosis with broad-leaved trees, its intense and aromatic scent makes it an irreplaceable ingredient in the kitchen.
We cultivate the purest Saffron of Umbria and between October and November we collect the precious violet flowers from which we obtain the stigmas which are then dried.
The surrounding woods and countryside offer us an incredible variety of wild herbs.
