Our love of food is based on the choice of raw materials: the cereals, legumes, extra virgin olive oil and truffles all produced directly by us. The other ingredients are almost all provided by small local producers, certified organic farms.
Dishes include hand-made pasta, gnocchi and ravioli, and soups prepared with organic cereals and legumes and other seasonal ingredients.
No less attention is paid to meat. For much of the year, we breed pigs according to custom especially for us and for our guests. Chickens and rabbits come from small local farmers, and we select only prime cuts of beef and lamb.
Most of the vegetables come from our vegetable garden, while the potatoes come from Leonessa.
The desserts are all made on the premises using eggs and milk from our mountains.
